Isolation type transformer has secondary windings separate from the primary windings (i.e., no electrical/galvanic connection). It blocks harmful power line noise and surges from reaching your sensitive (and expensive) equipment that may otherwise cause damage.

Isolation from power mains has added benefit of safety - it greatly reduces risks of accidental electrocution or damage to equipment due to earth grounding. Since it also limits power to 100VA, there won`t be a scary explosion(note 1) if you accidentally short the secondary output momentarily. You will appreciate this safety feature if you are an experimenter frequently tinkering AC-powered projects.
